Pale ale is a top-fermented beer made with predominantly pale malt. The highest proportion of pale malts results in a lighter colour. The term first appeared around 1703 for beers made from malts dried with high-carbon coke, which resulted in a lighter colour than other beers popular at that time. Different brewing practices and hop levels have resulted in a range of different tastes and strengths within the pale ale family.
American pale ale (APA) is a style of pale ale developed in the United States around 1980. American pale ales are generally around 5% abv with significant quantities of American hops, typically Cascade. Although American brewed beers tend to use a cleaner yeast, and American two row malt, it is particularly the American hops that distinguish an APA from British or European pale ales.
India pale ale (IPA) is a hoppy beer style within the broader category of pale ale. The term 'pale ale' originally denoted an ale brewed from pale malt. While our beers are many and diverse, yet unified by overarching boldness, India pale ales are our undeniable bread and butter. The result is an intensely citrusy, beautifully bitter beer is worthy of the simple-yet-lordly title of Stone Delicious IPA. Lemondrop and El Dorado hops combine to bring on a magnificent lemon candy-like flavor that’s balanced by hop spice. In addition to being incredibly flavorful and hopped in our typically heavy-handed way, Stone Delicious IPA is also fermented in a manner that breaks down and removes gluten, rendering gluten levels so significantly that the beer qualifies as a gluten-reduced ale per the FDA (. Food and Drug Administration).
This ale tends to end up very bright and clear because the yeast is highly flocculent; however, chill haze can be an issue because of the makeup of the grist as well as tannins in the black tea. You can do a protein rest or cold condition for a few weeks after packaging to combat this. I highly recommend serving at cellar temperature (although it’s good cold, the malt tends to sing at a higher temperature).
